3. Fall is prime time for the distillation of souma, a local spirit produced in artisanal distilleries from figs. Before being distilled, figs are soaked in water for 10 days at least, during which fermentation occurs, and sugars are transformed to alcohol. Photo from Mesta of Chios, November 2006.


Chios has regular ferry connections to Cesme, on the neighboring Turkish coast. The trip takes less than one hour.
